Cinnamon Sugar Cookies (from kosherista.com)

If you bake these for just the right amount of time they come out real soft and chewy. Shape the cookies into:
a) stars- to symbolize the blessing that God gives Abraham that he will have many children, just like the stars in the sky OR
b) feet- to symbolize the journey that Abraham makes (lay them across the table and you might get more questions!)

Ingredients
• 1 cup brown sugar
• 1⁄2 cup white sugar
• 1 cup oil or margarine, softened
• 2 eggs
• 2 tsp pure vanilla extract
• 2 1⁄2 cups flour
• 1⁄2 tsp baking soda
• 1⁄4 tsp salt
• 3 tbsp white sugar
• 1 tbsp cinnamon

Instructions
Preheat oven to 300. In a large bowl, blend sugars with an electric mixer at medium speed. Add the oil, eggs and vanilla. Mix at medium speed until light and fluffy. Add the flour, baking soda, and salt, and blend at low speed until just combined. Combine sugar and cinnamon in a separate bowl. Shape dough into 1 inch balls and roll each ball in cinnamon-sugar topping. Place onto greased cookie sheets, 2 inches apart. Bake for 15-20 minutes. Don’t over-bake otherwise cookies will be hard after they cool.
